The Wassco French Rack Machine is now used in the meat industry all over the world. Using high pressure water, it trims perfect French racks, removing meat from the bone to the eye muscle in six seconds from fresh and a little longer from frozen.
The French Rack Machine far outperforms the most skilled worker, consistently producing precise, accurate racks with a superior standard of finish. Cleaning is a breeze. The machine rinses with cold water before being foamed and sterilised with 82 degree Celsius hot water. The pumps are located away from the machine to reduce noise and heat.
One operator can French up to six racks, easily replacing three to four labour units doing the work by hand. The standard model will French up to 70mm.
